You may be asking… how does one come to have a fermentation company?
What started as a hobby creating fermented treats to better our gut health quickly grew out of control in our small Chicago apartment. Making a couple jars of dill pickles to snack on turned into a full blown R&D extravaganza - what seasonings pair best with carrots and cauliflower? Which salinity brine works best for cucumbers vs. root veggies? How do we make bread & butter pickles less cloying? Can you ferment green beans and asparagus and strawberries (the answer is yes!)? Within a few months, our home fridge was so full of test batches of ferments that there was nowhere to keep the rest of our food! And so, second fridge was purchased…
Yes, that’s right. A second refrigerator in our already small apartment to hold all of our fermented experiments. He lived in the living room and became a home for our collection of punny stickers. But as the recipe development continued, even second fridge became packed to the brim… So we decided it was time to share our spoils with local friends. With their encouragement and support, we have been able to take our hobby into a fully functioning operation!
